Creamy Strawberry Mango Popsicles. – Half Baked Harvest

These homemade Creamy Strawberry Mango Popsicles are the frozen treats we all need stashed away in our freezers this summer. Made simply with just 3 ingredients: heavy cream (or canned coconut milk), strawberry jam, and chunks of fresh (or frozen) mango. These don’t get any simpler, and they do not disappoint. They’re extremely creamy, sweet, fruity, and oh-so-delicious. They’re quickly becoming everyone’s favorite easy frozen treat!
It’s Memorial Day weekend and summertime is here! It’s the season for icy, cold creamy desserts, chilled drinks, big salads, and so much time spent enjoying long, sun-filled days outside.
I just love summertime and I’m so excited it’s here! I knew these pretty popsicles would be the perfect easy recipe to share for the holiday weekend. You really do have to make these, there is no excuse, they are so simple!
When I was thinking about what to share ahead of the holiday weekend, I knew I wanted to do a frozen dessert. With this being the unofficial start of summer, nothing says summer better than ice cream!
This recipe is not actually ice cream, but these pops are just as creamy and delish. I wanted a simple, vibrant recipe. And if you can believe it, you only need 3 ingredients to make these. They are totally no fuss!
This is how I make my popsicles
Step 1 – the strawberry layer
There are two layers, strawberry, and mango. I start with the strawberry, then finish with the mango. For the strawberry layer, I use 1 jar of my favorite strawberry jam. Then I mix in either heavy cream or canned full-fat coconut milk. Either option is delicious, but I do love the flavor the coconut milk adds.
However, if you want super creamy popsicles, use heavy cream! Simply mix the jar of strawberry jam with the cream – quick and easy. Then grab your popsicle molds and fill them up about halfway, leaving room for the mango.
Step 2 – the mango layer
For the mango layer, use fresh or frozen chunks of mango plus cream. If you can find them, use champagne mangos. They’re even sweeter (and prettier with a more vibrant color) than a traditional mango.
Use a blender to puree the mango chunks with water, or use pure mango or orange juice. I use mango juice, but water will work just fine too!
Next, mix with cream until creamy.
Step 3 – swirl the layers together
Pour the mango blend directly into the strawberry layer. You can use a knife to lightly swirl the layers together.
Now freeze until FROZEN. The trickiest element of this recipe is waiting for them to freeze.
Other flavor ideas
If you want to switch my recipe up a bit. Try using any flavored berry jam. Blackberry or blueberry jam paired with the mangos would be just as yummy and delicious.
Just be sure to use real fruit jam with minimal sugar and ingredients.
These popsicles are creamy, flavorful, and yummy. My family has been loving coming down to grab a healthy sweet frozen treat!
You only need 20 minutes to make these, plus freezing time. And there’s a good chance you already have everything in your kitchen right now (I know I usually do).

1. In a blender, blend together 1 1/2 cups milk/cream and the strawberry jam. Evenly divide the mix between 8 popsicle molds or use paper Dixie cups.2. Blend the mango chunks with 1/4 cup water or use 1/3 cup mango juice. Add 3/4 cup milk/cream until smooth. Pour the mango blend over the strawberry jam, filling the molds to the top. Use a knife to gently swirl some of the strawberry up into the mango puree. If desired add a few thinly sliced strawberries or raspberries to each mold. 3. Freeze until firm, 4 hours or overnight. Keep in the freezer until ready to eat!
If you don’t have a popsicle mold: just use paper Dixie cups!
