Pumpkin Coconut One pot pasta
2 cups frozen broccoli
1 pd of pasta ( egg free)
15 oz can pumpkin
6 oz of coconut milk
2 tsp paprika
2 tsp onion powder
2tsp garlic powder
Add to your liking of consistency of veg broth. As well as flavor with salt to taste or even pepper flakes. If you don’t like coconut flavor skip it and add only broth 🙂
I like to boil my water and broccoli together. Once to boil add in the pasta. Dump water after pasta cooks and just mix all the ingredients on in. You can even top w nutritional yeast for that cheese flavor!!
