Easter Dinner Ideas – Easy Recipes For Dinner – Potluck Dinner Ideas
If you are a new cook I hope today’s video gives you the encouragement you need to just get in the kitchen and surprise yourself! Cooking doesn’t have to be complicated or intimidating, these are no fuss and no fail favorites. If I can learn to cook ANYONE can!
Perfect Hard Boiled Eggs
Cover eggs with water at least 2 inches above the top
Bring to a hard rolling boil
Cover and turn off heat
Let the eggs sit on the stove eye covered for 20 minutes
Then rinse in cold water, peel and enjoy!
To “Devil” them, just mix 1 tbsp mustard, ¼ cup mayo, 1 tbsp sweet pickle relish, one cap full apple cider vinegar into the yolks. Adjust to taste and fill the white egg cups and serve.
Broccoli Casserole
2 – 12 oz bags frozen broccoli or (1 large bag)
1 can cream of mushroom soup
8 oz bag shredded cheddar cheese (shredded Velveeta is yummy)
1 cup mayo
1 egg
Chopped onion (half)
Salt & pepper
Sleeve of Ritz crackers
½ stick butter (melted)
Cook broccoli according to directions, drain and combine with the next 6 ingredients well and spread into a greased casserole dish. Crumble crackers on top (drizzle melted butter over top) and bake at 350 degrees for 45 minutes to an hour. Casserole should be bubbling and the crackers should be browning when done.
Maddie’s Favorite Lemon Dessert
Filling:
8 oz Cool Whip thawed
3 cups cold milk
2 small packs lemon instant pudding mix
1 package graham crackers
Icing:
2 cups powdered sugar
1 stick melted butter
2 tbsp lemon juice
2 tbsp milk
Mix milk and pudding together then fold in Cool Whip
Grease pan with spray or oil, line with graham crackers
Pour half pudding mixture over crackers and spread evenly
Lay down another layer of graham crackers
Pour remaining pudding mixture over grahams and spread evenly
Top with graham crackers
Icing-
Mix melted butter,2 tbsp milk, 2 tbsp lemon juice and 1 cup powdered sugar
Add one more cup of powdered sugar
Pour over top and spread evenly
Freeze 4 hours, then transfer to fridge
