For 4 people

TOTAL TIME: 60 mins
Preparation: 15 mins
Cooking time: 45 mins

Ingredients :

6 Large eggs
10 cl Liquid cream
1 small cooked beet
100 g Fresh goat cheese
400 g Potatoes
15 g Butter
1 sprig of fresh thyme

Step 1: Wash the potatoes then cut them into pieces.

In a frying pan, heat the oil over high heat.

Step 2: Fry your potatoes in pieces for around fifteen minutes, mixing regularly.

Place your potatoes on absorbent paper to remove excess fat. Add salt and pepper.

Step 3: Cut the beetroot into thin slices.

In a small salad bowl, beat the eggs with the liquid cream.

Step 4: Add the potatoes, crumbled goat cheese, salt and pepper then mix everything together.

Heat the butter in a high-sided frying pan.

Step 5: Pour the egg mixture into the pan.

Place your beetroot slices on the surface.

Step 6: Bake at 180°C for 25 min.

Decorate your frittata with fresh thyme.
